Baked Pizza Pasta Casserole

Pasta and pizza are kid favorites in our household. Probably in yours too! Always easy, always yummy, and always great for little helpers to join in. This simple supper is a pasta that tastes just like pizza. So family friendly!

This recipe servers four.

INGREDIENTS

1 pound pasta cooked to al dente (I use shells but you could use ziti, penne, or rigatoni)

1 pound ground beef (or ground chicken or turkey)

1 onion, chopped

2 cloves garlic, chopped

1 (10-ounce) can condensed tomato soup

1 (14-ounce) bottle pizza sauce

1 cup sliced pepperoni (I use turkey pepperoni but you can use what you love)

1 cup mozzarella cheese, shredded

1 cup panko (or your favorite breadcrumbs)

Extra virgin olive oil

Salt and pepper

Preheat the oven to 350 degrees.

Bring a large pot of water to a boil over medium-high heat. Add the pasta and cook until al dente (about 6 or 7 minutes).

Brown the ground beef with the onion and garlic and a drizzle of olive oil in a skillet over medium-high heat. Once the meat is browned and crumbly, sprinkle with a little salt and pepper, reduce heat to low, and stir in the tomato soup, pizza sauce, cooked noodles, and pepperoni.

At this point, if your skillet isn’t oven-safe, transfer the mixture to an 8 × 8 baking dish.

Sprinkle the cheese and panko (or breadcrumbs) on top of the casserole, cover with foil, and bake 20 minutes. Remove the foil and bake another 5 minutes or until browned and bubbly.

Remove from the oven and serve.
